We love finding ways of incorporating what we grow & forage into baking! Juniper & chive blossoms make a pleasant savoury combination along with a Spruce infused avocado oil brushed on top!
Did you know we have a small apothecary within our kitchen that is full of garden grown as well as foraged finds? Our yards (aka the Jensen Homestead!) both front and back, contain all kinds of edibles from berries to herbs, edible coniferous trees and a TON of rhubarb! We harvested four batches of rhubarb out of 7 plants totalling 37 pounds of rhubarb last summer! We also live in an area where we have access to natural fields and can go for daily forages! I almost always take a basket when I take the dog our for her morning walk. Yarrow, sage, mint, dandelion and wild roses often find their way onto our dining table, into our tea or in our bath tubs! I love infusing oils, salts and sugars to use in our cooking and the juniper & chive blossom salt is one I love to use often. *Note: This way of using our grown and foraged ingredients is more of a slow and mindful process. It requires patience, wandering and knowledge. It is important to note that you must do your research when using any plant or herbal recipe. Ingredients:
- 1 box of Jensen’s Homestead Original Crafted Beerbread Mix
- 355 ml (1 can) of beer
- 1/4 cup of a savoury infused olive oil
- 1 tablespoon of Juniper & Chive Blossom Salt
- Juniper and chive blossoms for garnish *optional
Directions:
- Preheat oven to 375°F and prep a loaf pan.
- Follow the directions on the box for making Beerbread except replace the melted butter with a savoury infused oil and lightly drizzle some over the top of the raw loaf. We use our own spruce infused avocado oil, but an infused olive oil such as rosemary would work just as well!
- Once the loaf has been “oiled” garnish with your infused coarse salt. A little goes a long way!
- Add a few extra blossoms and Juniper sprigs if you have them. Bake according to the package directions.
- When ready, remove from the oven and lightly brush a bit more of the infused oil on top.
- Slice and serve with butter as a savoury side to a beautiful home cooked dinner!
