This decadent delight is a staple in our home! It has been devoured, desired and gifted for many years!
Coconut milk is the secret ingredient that lends the fullness and thickness to this perfect topping. Be warned – you may just eat it by the spoonful and forget storing it in the fridge – it is typically gone in a hot minute!! We do think it is best enjoyed poured over ice cream and Lannie Rae Gourmet Craft Waffles!
This recipe is easy and may be enjoyed using other flavourings like mint, orange, cinnamon, mocha and so forth. We have made this with both cane sugar and with refined granulated sugar. Keep an eye on this while making it to ensure the sugars do not burn and do not over cook. This can also be made with full fat cream.

Ingredients:
- 1 & 1/2 cup of cane sugar (or other unrefined sugar of choice)
- 3/4 cup of unsweetened dark cocoa powder
- 1 tbsp of corn starch (or arrowroot powder)
- 1 tsp of kosher or sea salt
- 1 cup of coconut milk (canned)
- 2 tsp of vanilla extract
Tips & Tricks:
- This recipe is easy and may be enjoyed using other flavourings like mint, orange, cinnamon, mocha and so forth.
- Keep an eye on this while making it to ensure the sugars do not burn and do not over cook.
- This recipe can also be made with full fat cream.
Directions:
- In a medium saucepan, whisk together the cane sugar, cocoa, corn starch (or arrowroot powder), and the salt.
- Gradually stir in coconut milk, bring to a boil over medium-high heat, reduce to a simmer.
- Cook until thickened and smooth, approximately 10 to 15 minutes.
- Remove from heat, add vanilla and stir to combine. Serve warm.
- Alternatively, while still hot, pour into a clean, heat proof glass jar with lid and store in the refrigerator. Simply place in a hot water bath to warm up for future servings.
